Luftbild Ostseefjord Schlei, Sieseby, Gasthof Alt Sieseby, | Im 19. Jahrhundert wurde Sieseby maßgeblich geprägt vom Hamburger Kaufmann Gustav Anton Schäffer, der ab 1839 für seine Gutsarbeiter neue Häuser bauen ließ. Diese Häuser, die heute als denkmalgeschützte Reetdachhäuser bekannt sind, tragen noch heute die schmiedeeisernen Initialen „G. A. S.“. Mitte des 19. Jahrhunderts verkaufte Schäffer das Dorf an die Familie zu Schleswig-Holstein-Sonderburg-Glücksburg für 615.000 Reichstaler. Heute befindet sich der größte Teil des Gemeindegebiets im Besitz der Herzogsfamilie.
